Sexcapades, Hold the Pasta

I’ve got a few friends that are “experienced” and “spontaneous.” When they speak of their sexcapades with different men and women (yes, some of these friendlies are gentlemen and some are wonderful members of the LGBT community) I tend to feel lost and somewhat-in-awe of their “Smash Lists.”

Call me old-fashioned, but the act of being intimate with another human being is not something I think  should be described as “smashing” unless you’re from some other part of the world where telling someone you’ve had a “smashing good time with your SO.” Even in a hangout context, it seems odd.
Who the heck “smashes” anyway…other than The Hulk?

No.
I’ve decided that adults do not “smash.”
So when my friend, the inspiration for last week’s post, called me a prude and unimaginative for not having a smash list, well – the feast was damn near ruined.

Instead of getting my panties in a twist, I decided to fuel my thoughts into some fiery dishes.
It’s been too cold to hit the pavement in my sneaks, so the oven has seen a flurry of activity!

 

Here I have my version of Zucchini Lasagna. It’s pasta-free! The beau & I love it.

You’ll need 8 oz of Ricotta, 1 lb. of ground lean sirloin, an onion, 1 pot, 1 bread pan, a cutting board and some spices!

First, heat the pot with a teaspoon of vegetable oil or a spritz of EVOO spray. You’ll need to start browning your sirloin before you slice your zucchinis.

Brown yo' meat first! I mixed in salt, pepper, 1/4 cup of diced white onion, 1 T each of basil and oregano.

Be sure to preheat your oven to 350 degrees. Now’s a good time to do so.
Now, take 2 medium zucchinis, slice them lengthwise – about 1/4 in. thick.

Place a few of them in a foil-lined baking bread pan, ours needed about 3.5 (the greenies were a bit short for the pan) to form one layer. I’m also incredibly lazy about cleanup, so the foil eases my dish-washing woes.

Next, comes the ground sirloin and pasta sauce. We used the Classico Spinach & Parmesan…it was sooooo yummy!
1 lb of ground sirloin to 1 bottle of sauce. If you’re interested in making a spicy marinara from scratch, I’d be happy to throw in some advice there, soon! I was in a hurry, so I used a pre-made sauce.

Once the sirloin cooks through, add the sauce and warm it through.
Go ahead and get ready to start layering!

Since you already put the zucchinis down, your next layer will be the ground sirloin and sauce.

Finally, add a layer of cheese! It’s a 1 part Ricotta (cottage cheese is perfectly fine to use instead), 1 part Mozzarella mixture. I used half a cup of each and put down a thin layer, using 1/3 of the mixture. You should have enough ingredients to make 2.5 layers, ending with cheese on top.
We had a bit of the meat mixture left over, so I used it for our packed lunches on the spaghetti.

Once you’ve finished up your layers, pop that wonderful combination of meat-meets-veggie into the oven at 350 degrees for 45 minutes.  Patience is key, here. Don’t gnaw off any appendages while you wait and are cornered into smelling the yummly scents emanating from your kitcheny parts.

Once your oven dings! then it’s good to go!
Pull it out, carefully – don’t burn yourself in haste, sweetheart.
Next, slice yourself a juicy piece of zasagna!
Pair it with a small side salad and you’ll be dancing right along with your taste buds.

Memo for the Boys

Caldo…Mmm!

This fitchick is stuck at home, feeling crummy while nursing a heinous cold. I’ve had some calabaza con pollo but still need sleep and about 19 more blankets because it’s insanely cold in this body! Brrrreathing hurts. Blech.

This crumtastic day brought a couple of things to mind.

1. No one feels sexy when they have the flu, cold, stomach virus [insert your own kinda-disgusting ailment here]

Much like Cameron, I have a friend who wants to pull me out of bed and play hookie. Not happening, friend.

Thankfully, I don’t have to go anywhere. The beau made sure the apartment was stocked with soup, medicine and more Vapo-Rub than I’d care to admit. The crazy thing to me is that, despite the lung-hacking, cold-sheen from my fever breaking and the tissue mountains on our bed, this lovely man still wants to snuggle and shower me with kisses.
My first thought was, EWWW! Don’t. I’ll get you sick! But my second, almost first, thought was – I am so incredibly lucky to be loved by you.

2. When you’re sick, being loved makes things a million times better.

After the tea and soup he suggested, I’m starting to feel better. I still need another 4 blankets though. I’m sure he’ll show up with one in a jiffy.

I mean, most responsible [and irresponsible] adults have sex. It’s a primal need to procreate. Everyone does it…right?

The straight up answer is yes…and no.

Why the heck am I mixin’ my sweet-tea sippin’, pasta-makin’, cupcake-bakin’ opinions on this topic in with my normal foodie finds and fit experiences?
Because this year I want to expand my bloggy horizons and discuss all levels of health. Being fit, I feel, means that you are in total homeostasis. Every piece of you, mind – body – soul, has reached a balance. If part of you is whackin’ out, or your two ears o’ corn shy from a whole bushel – well, you need to straighten out that ship and get to your true north.

You may be wondering why I suddenly feel this way.
I don’t suddenly anything.
But I am bringing you in closer to my friendship circle and delving into another level of comfy with you, because I realized that sexual health is a growing concern for many of my friends.

As today is the first of the year and 2014 is no longer “upon us” but rather…HERE, I want to discuss my plans.
While I am ramping up a new semester of teaching, prepping for graduate school and finding new ways to sate my fitness and foodie passions, I stumbled into a wasp nest of problems that several friends of mine are battling. I’m obliviously baking away in my kitchen and these lovely ladies and gentlemen are worried about their significant others who are seriously mistreating them and mangling their affection into twisted perversions of love.

What’s on everyone’s mind?

RELATIONSHIPS

Quite frankly, I’m no expert. I am however, experienced with (brace yourself) 2 long-term relationships. Again, no expert claims here.
But, don’t shut me out just yet.

I grew up with 3 brothers, strong father figures in my dad, uncles and grandfather, and was raised to know my self worth. Knowing one’s worth, I’ve found, makes it a helluvalot easier to know what to expect from a partner.

What happens when one doesn’t know what they should expect in a relationship though?

A friend of mine is exactly in this situation. She has no freaking clue what she’s worth, but she found a guy who tells her she’s pretty and BAM! She’s his. She pays his bills, buys gifts for his kids, and is impressed by his gentlemanly abilities to have kept his package under wraps for more than three dates.

When did having several baby mama’s, no job, saying please and thank you every so often, calling you “baby” and pinching your derriere in public become the ways of a “gentleman?” I must have missed the damn memo.

In case you didn’t know – let me tell you…THIS IS NOT HEALTHY! And no, you probably shouldn’t be dating the jerk.

A partner should treat you with respect, love, and passion. They should not just be passionate towards you, but about you as well. You should be praised, held, sung to, cooked for, bathed in kisses, etc… and reciprocate these things to your loved one!
It’s not difficult. Express what you need and ask them what they need too!

Asking your SO can be difficult, but your needs are pretty easy to figure out.
Knowing your worth, especially when no one explained this concept to you, is hard to grasp. Basically, you are your own golden rule.
Don’t let others treat you in a manner in which you would not treat yourself. Only you know your limits and feelings. Listen to your heart, as cheesy as this may sound.
You are amazing and highly valued.
Believe me when I tell you that your own brand of scrumptious is a hot commodity. Don’t be plastering that on just anyone’s basic ham and cheese sammich. You need to be delicately slathered onto a slice of panini-pressed sourdough with Gruyere, avocado slices, tomato and roasted turkey breast.
Go find your perfect sammich, instead of settling for the local fuel-station version.

Put yourself out there this year and go after what you want.
You deserve it.

Wait for the one. Your one. If you can.
I promise you, chivalry still exists.
Oh, good guys don’t finish last either.

PSA for your Sexy Self!

Hi ya’ll!

It’s Christmas Eve! I’m spending my much-needed family time in the deep south. Tejas! 
Growing up in such a rich (literally) Hispanic-centered foodie capital has had its thumbs ups and downs.
For example, it took going to college (and living alone!) to realize the meaning of portion control.
In a family of 6, with 4 men, making calabaza con pollo for anything less than 10 people was considered a joke (and still is).

Honestly, Paula Deen could sit and take notes from my grandmother on the proper uses of various lards, fats and butters. At least, she could have – before grandma jumped on my healthy train (and the doctor’s orders set in).

We, as a culture (and I truly hope you don’t find this offensive or rude – it’s matter of opinion but usually a rule) loooooove our fats.
Making tamales?  NEED LARD. If you didn’t know – that’s why they’re so delicious. Oh, and they get a sprinkle of magic, too.
Calabaza con Pollo? Extra oil, please.
Wedding cookies? Lard AND Butter. Double check, check!

According to the Office of Minority Health, Hispanics are almost twice as likely to develop diabetes over the non-Hispanic communities. The CDC reports that over a third of the Latinos surveyed have high blood pressure and are not treating it.

Why the hell not, right?

Because we, as a population, tend to fore-go doctor’s office visits when informed of a possible health threat. That is…if a Hispanic bothers to get to a physician in time to be diagnosed and receive treatment.

So you see, attending college was a huge step forward for me – both educationally and health-wise.
I needed to get away to learn how not to feed my body.

Don’t start hating on me right away.
I am a devout foodie and realized (almost instantly) that I simply couldn’t function without my favorite foods from home.
Step one  – learn how to fix recipes for a single person.
Step two – don’t revert to cooking for a family of 6 and think “It’s ok, I’ll keep it for leftovers.”
NO!
Leftovers with gigantonormous portions are such a terrible idea! Self-control has left the building.

Thankfully, I finally figured out portions and working out. It took a long damn time – but I figured it out. The boyfran and I  fell into step with fitness and are loving it. [sidenote: he’s out cycling right now while I post this…laaaazy Sarah]

Collectively, we have lost 60 pounds in the past 7 months. Between rock climbing, running and the occasional What-a-Burger (just about the best burger you’ll ever have) – we are fittin’ it!

With all this fitness going on, we can come home for the holidays and realize that [despite the fact I purposefully do not own a 20 qt pot so I do not “decide” to make tamales for the pair of us] we do not need to inhale every ounce of food placed in front of us. Honestly, that’s how he gained 50 and I gained 35 pounds the first summer back from our freshman year. Oh, hell yes we did! And, it’s horrifying to look back on those pictures.

We come home, eat a few faves and then make sure to go for a run or simply maintain our jean size. It’s too much hassle to worry about calories while we’re here in South Texas. In fact, it’s damn near impossible.
One tamale contains the same (if not more) calories than a McDonald’s Big Mac. How gross is that?

Instead…we eat what we want and hit the gym. Don’t see this as a reward system though! I fell into this trap once and the beau had to drag me the hell outta there!
Don’t tell yourself, “Oh, I can eat this fattening piece of scrumptiousness because I ran five miles.”
Eating it just threw your workout into wonk-mode and now you have to work out again.
No! You are not a dog. Eat to be fit, not fat.
Eating to support your foodie habit is one thing (because it’s in moderation and balanced), but eating to support donuts and heavy cream with a side of lard – not so smart. You could be a fitness freak with clogged arteries and simply drop dead, mid-run.
Be smart about the choices for your body. I promise, you’ll be happier (and healthier) for it.
Go enjoy your roast beast at your Christmas feast!

No Food Shame

Over the weekend, we went on phaaabulous (and quite slippery) adventures while wandering about on the ice. You guessed it, plenty of coffee trips! We heart any reason to be dorky together.

It was bundles of fun and I was delusional enough to think my week would continue on as fan-flippin-tastic.
Granted, my week was not horrendous – it has been quite challenging. I almost cried yesterday.

Naturally, I wanted to eat my feelings.
As we needed groceries, it was not the brightest notion to leave me to my own devices at Central Market. But the beau wanted to mill about at home and I was late getting home from work. Meetings upon meetings for teachers, ya know? I digress…
Getting back to my gem, CM:
Any of you who have shopped in this foodie haven know damn straight what I’m talking about. Those who havent – get to one, ASAP! They’re ahhhh-mazing!
Seriously, I’m glad it wasn’t pay-day, or I would have left with much more of their slobberific products.
Still, I threw down more than expected and purchased interesting treats such as popovers, strawberry&goat cheese muffins, turkey meatloaf, Scottish salmon (immediately thought of plating these fillets in broccoli & Julienne pepper kilts), sexy fajita mix and Sea Salt Truffle Brownie Mix.

 

YUM-O! Right?
I went a little loose-ends with all the goodies – just call me a NOMS-retail-shopping savant.
Everything we tried from the bakery was delish! Basil & Garlic Popovers (bundles of bready joy that explode in your mouth!) – they were delightful after microwaving them for 35 seconds. The muffins are the beau’s new fave. I made a version of these a few weeks ago…recipe’s in here somewhere & I’ll insert it once I find the darn thing.

Today was much better, though I didn’t find time to work off the doughnut from this morning or the lovely trio below. There’s no way I was able to eat everything, but sampling these treats was a nummy part of my day.

OH! I almost forgot! I made these lovely blondies. Inspired by Katie and her super-awesome healthy dessert blog, I set out to make these nomNomnom smart blondies! Mmmm! Scrumptious stuff from this kick-ass girlie. <3 her!

I substituted sunbutter (the sunflower seed version of peanut butter), added white chocolate chips, and was pretty liberal with the ingredients. I am going to add cranberries or strawberries this time around though. Pictures to follow!
The recipe is super simple and allowed me to use our Ninja blender, in the dough mixer. I tossed all the ingredients in, then poured the batter into a foil-lined Pyrex pan to bake.

Icepocalypse…? Not So much.

The icemageddon hit Dallas on Thursday night. Sufficed to say, we had a four day weekend. Well…I did. The beau had to work Monday because the roads were better. Our school district (and every other one within a 30 mile radius) opted to stay toasty and at home on Monday.
Brilliant!

I should have graded papers. Meh.Maybe I should have worked on my final exam for next week…erm, no.

What did I do?

I worked out (seriously). And…we made mimosas.
That’s right. My family’s classy.
Then somewhere in-between, we slid to Starbucks and had disgusting soy gingerbread lattes, bu enjoyed each other’s company, managed to meet Mom for our posted Sunday Brunch and spent the lazy time cuddling because we had power, but some dolt ran into a pole – effectively ending our spree with awesome cable time.

We opted to warm up the truck, thaw off some ice and laugh at the ridiculous thought of walking to Target to grab ingredients for stew. Because, you know – I would totes be up for that adventure!

We stayed tucked away in our apartment hidey-hole, went for some laps at our gym (on-site, soooo thankful!) on Friday and Saturday. We even ordered Thai food! Let’s just be glad these guys braved the roads. They were pretty terrible.

Our Sunday proved much more adventurous. We went to Breadwinners!

I was so full (and would have felt terrible) – leaving him behind was the best option. My jeans thanked me for it, later. Though Krispy Kreme has haunted me with their damn red light as of late. I swear! It’s always ON!

Gah. It was soooo great to have some time off to enjoy life. Don’t you just love those days?
We’ve got a little over one week left of classes and then my kiddos are off (as am I) to enjoy the winter break.
I’m loving every minute of this winter.

Foodie Christmas – Knock the Pants Off Your Chef!

As my first official year in the “big girl” world, I can finally stop drooling over anything that suits my kitchen fancy.
Sadly, there is a huge difference between being “able to buy” something and being able to “afford” it.

Between student loans, bills and my car payment…it’s difficult to splurge on kitcheny goodies. Thankfully, I know plenty of wonderful peeps who lurve me bundles and are looking to get me some new gadgetry. I highly recommend the following nummly-makers for the chefs in your lives. They’re kitchen masters who, like myself, want to drop some serious bills at Williams Sonoma, Uncommongoods, or Crate&Barrel. Anytime I see something I don’t have in my kitchen, I want it! These beauties are on my Christmas list:

1. Herb Infuser
For all the yummy flavors melded into one dish. Cooking with herb-infused (or veggie) oil lends to some amazing dishes! Think salads, chicken, beef…pretty much anything you can imagine. Throw in a sexy wok and some wine – you’re in business!

2. An espresso maker
One at a much more affordable price. The money-savvy side of me can’t bear to spend hundreds of dollars on an espresso maker. I mean, seriously…who can do that? This little guy has pretty positive reviews and comes in under $40. I may just love this contraption.

3. A Dutch Oven
Wonderful for casseroles, pot roast, pasta dishes…well – practically everything! It’s a spectacular way to go from stove to oven and melds a cacophony of flavors together. Mmmm!

4. A Mandoline
One of these babies turns into a chef’s best friend, especially when trying to get just the right shape for chips or Julienne veggies. Personally, I <3 sweet potato baked fries, but they’re hell to make because of the hard potato. Quite a pain the rear, truly. A mandoline makes kitchen life easier, therefore – I love it!

5. Nerdy Serveware (I ate some pi)
Just because! Any nerdy cook will heart you bundles for adding extra smiles to their kitchen. These plates look super cute and would be even better with my homemade chocolate cake on them!

6. The (that’s right, the one and only!) Stand Mixer
I bake all the time. At least once a week. This beauty would make kitchen duties that much more fun. I’m sure I could cream butter and sugar for hours if I had one!

7. A kitchen torch.
This may not be for anyone with mini-pyros in the house, but I can’t think of many foodiefreaks that don’t desperately want one of these gadgets! Think of the Crème Brûlée (Ree’s may be my fave), my friends! Just revel in visions of sugary goodness. NOMS!

8. An Immersion Blender
I’ve wanted to make smooth butternut squash soup, tomato soup and even some yummly gravy, but alas…it’s seriously difficult without one of these puppies. I end up with lumpy portions of deliciousness, which just makes me sad. I need beautiful, not just finger-licking good dishes. Hence, my need for this!

9. CookwareThe beau and I still use the same cookware we bought in college. Sure, that wasn’t too long ago, but these guys are over 3 years old and really need to be put to rest. The crazy thing? Buying pots and pans can get insanely pricey! We’ve looked all over for just the right set and usually fall head over heels for upwards of $400 sets. Again…insane! But here we have a pretty great set, dishwasher safe and over safe to 450 degrees. Perfect for browning off fish fillets and steaks.

10. Ramekins
My next baking adventure will be soufflé! As I love all things wintry and filled with deserts, these snowflakes are simply gorgeous! Sigh. What I’d give to bake with these.

The Porch offers some amazing, scrumptious, chop-licking, knock-yer-socks-off dishes that will instantly bring a smile to your taste buds. They put a new twist on traditional dishes from around the world. The menu is bold and delicious. Their “Big Board” offers weekly specials that you wish they’d add to their permanent menu. You’re guaranteed to love any dish they smack down in front of you and it’d be a challenge not to gobble up every ounce of that blissful flavor.

I got to ring in my favorite month with none other than my Mama Bear!
We’ve had a long-standing Sunday Brunch date for the past few years just to catch up on weekly adventures and so I could vent about whatever wickedness my professors were throwing my way. -.o
We do our best to keep the date, but sometimes things get in the way.

My family spent Thanksgiving in my neck of the woods this year and I luurved every. single. second. When the giggles, mini-munckins and hugs drove away, I was left all alone. this meant two things
1. I had plenty of peace & quiet to study for the GRE on Tuesday
2. There was an overstock of turkey but not nearly enough pancakes.
– Enter Mom.

She whisked me away to Breadwinners this morning for brunchy business.

I enjoyed the McKinney Ave. Mom munched on the Chicken Fajitas.
Which, oddly enough…weren’t really fajitas. They looked much more like chicken breast pieces. Nonetheless, she raved about it. Unfortunately, we both forgot that we usually share our dishes with the beaus, so we had lots of leftovers.

Sadly, the tortillas were sorely undercooked on Mom’s plate.
The McKinney avenue really surprised me though! I normally don’t like chicken sausage, but this dish swayed me completely! It was wonderful!

If you’re in the Dallas area, you’ve got to check this location out in Uptown!
A solid 4 out of 5 stars.

Now, lesson plans for my students and picking up the beau at the airport. He comes home today! YAY!
